Lemon-Strawberry Cream

  • 500 g Strawberries
  • 6 sheets white gelatine
  • 2 untreated lemons
  • 4 Eggs (size M)
  • 100 g Sugar
  • 1 package Vanillin sugar
  • 200 g Whipped cream
  • 7-10 Tbsp Waffle Rolls

    Wash the strawberries, put 100 g strawberries aside. Clean and quarter the rest of the strawberries. Soak gelatine in cold water, dab dry. Grate the skin and squeeze the juice.

    Separate eggs. Cream egg yolks, sugar and vanilla sugar. Add lemon zest and juice and stir in. Squeeze out the gelatine, dissolve at low heat and stir into the cream. Put it in a cold place.

    Separately beat egg whites and cream until stiff. When the cream begins to set, fold in the cream, beaten egg whites and quartered strawberries. Pour cream into a bowl and chill for about 2 hours. Decorate with the remaining strawberries and the wafer rolls.
