Wash 1 lemon hot, dry and finely grate the peel. Squeeze the lemons. Mix 5 tbsp. lemon juice and zest, salt, pepper and approx. 1 tsp. sugar. Fold in 4 tablespoons of oil. Cut the mozzarella into slices or pluck into pieces.
Mix with the lemon oil and let it stand for about 30 minutes.
Wash the basil, shake dry and pluck the leaves. Heat 2 tablespoons of oil in a coated pan. Fry the basil on a low heat for 1-2 minutes until crispy. Drain on kitchen paper.
Arrange the mozzarella with the lemon oil and basil. Baguette goes well with it.
