Clean, wash and cut the celery into very fine slices. Peel carrots. Grate roughly on a kitchen grater. Peel, quarter and core apples, also grate coarsely. Put all 3 varieties in a bowl.
Mix with 3 tbsp. lemon juice and 3 tbsp. oil. Season to taste with salt and pepper
Wash the chives, dab dry and cut into fine rolls. Stir the sour cream and mayonnaise until smooth. Season to taste with salt, pepper and 3 tbsp. lemon juice.
Layer in 12 glasses of apple, carrot and celery. Spread the sour cream on top. Sprinkle with hazelnut leaves and chives. Keep cool until serving
