Lavender and apricot tartlets

Ingredients

Servings: 6
  • 6 Apricots (approx. 275 g)
  • 2–3 Lavender flower panicles
  • 1 Organic Orange
  • 150 g soft butter
  • 150 g Sugar
  • 1 package Vanillin sugar
  • 1 pinch Salt
  • 1 egg (size M)
  • 100 g Whole milk yoghurt
  • 50 g Apricot Jam
  • 200 g Flour
  • 2 TEASPOONS Baking Powder
  • 7-10 Tbsp Fat and breadcrumbs
  • 7-10 Tbsp Icing sugar

Directions

    Wash and halve the apricots and remove stones. Cut 1/3 of the apricots into cubes, the rest of the apricots into slices. Wash the lavender, dab dry and, except for something to decorate, strip from the stalk and cut into small pieces. Wash the orange hot, grate dry and grate thinly from 1/2 orange peel

    Cream butter, sugar, vanillin sugar and salt with the whisk of the hand mixer. Stir in the egg. Mix orange peel, yoghurt and jam and also stir in. Mix flour and baking powder and stir in quickly. Finally, add apricot cubes and chopped lavender to the dough

    Spread the dough into 6 greased baking dishes (9 cm Ø) sprinkled with breadcrumbs. Spread apricot slices on the tartlets. Bake in the preheated oven (electric cooker: 175 °C/ convection oven: 150 °C/ gas: see manufacturer) for 25-30 minutes. Remove and let cool on a cake rack. Just before serving, dust with icing sugar and decorate with lavender
