Large chicken skewers with vegetables in peanut sauce

Ingredients

Servings: 4
  • 4 TABLESPOONS roasted, salted peanut kernels
  • 500 g Broccoli
  • 2 (150 g each) Carrots
  • 1 collar Spring onions (6 pieces)
  • 100 g Mung bean sprouts
  • 7-10 Tbsp Salt
  • 2 (200 g each) Chicken filets
  • 2 TABLESPOONS Oil
  • 7-10 Tbsp black pepper
  • 1 TEASPOON Chili Flakes
  • 2-3 TABLESPOONS Peanut cream
  • 5-6 Tbsp Soy sauce
  • 4 wooden skewers

Directions

    Coarsely chop the peanuts. Clean and wash broccoli, cut off florets, peel and slice the stalk. Peel, wash and slice carrots. Clean and wash spring onions. Thickened onion ends lengthwise halve. Cut the rest into rings.

    Wash and drain the sprouts. Steam broccoli and carrots in 400 ml boiling salted water for about 8 minutes. Add spring onions and sprouts 1 minute before end of cooking time. In the meantime, wash the meat, dab dry and cut in half lengthwise once. Put each piece on a wooden skewer. Heat oil in a pan. Fry the meat for 3-4 minutes on each side. Season with salt, pepper and chilli. Remove the vegetables from the cooking water. Add to the chicken in the pan and set aside. Stir peanut cream into the vegetable water and bring to the boil.

Stir peanut cream into the vegetable water and bring to the boil. Simmer for 2-3 minutes. Season to taste with 2-3 tablespoons of soy sauce. Drizzle 3 tablespoons of soy sauce onto the meat and vegetables. Add 2 tablespoons of peanuts to the sauce. Serve meat with vegetables and peanut sauce. Sprinkle with 2 tablespoons of peanuts

    Simmer for 2-3 minutes. Season to taste with 2-3 tablespoons of soy sauce. Drizzle 3 tablespoons of soy sauce onto the meat and vegetables. Add 2 tablespoons of peanuts to the sauce. Serve meat with vegetables and peanut sauce. Sprinkle with 2 tablespoons of peanuts
