Lamb filet in spring roll dough with sprout salad

Ingredients

Servings: 4
  • 4 Lamb fillets (approx. 50 g each)
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 3 TABLESPOONS + 1/2 l oil
  • 4 discs (14 g each) frozen dough for spring rolls
  • 5-6 Tsp Asian chili sauce for chicken
  • 1 Protein (size S)
  • 4 Stem(s) flat leaf parsley
  • 1 small orange pepper
  • 1 Tomato
  • 2 Spring onions
  • 4 Stem(s) Mint
  • 150-200 g mixed sprouts (e.g. bean sprouts, radish sprouts)
  • 7-10 Tbsp Juice of 1 lime

Directions

    Parry the lamb filets thoroughly and season with salt and pepper. Heat 1 tablespoon of oil in a frying pan and fry the lamb fillets all around. Place the lamb on a piece of kitchen paper and pat dry.

    Wash the parsley, dab dry and pluck the leaves from the stalks. Spread each lamb filet with 1 teaspoon of chilli sauce and wrap it with parsley leaves. Place 1 lamb filet on the lower third of a spring roll leaf.

    Brush the edges with egg white. Wrap 2 cross sides over the fillet, brush the edges again with egg white, then roll up from the long side. Do the same with the other 3 fillets. Clean, wash and quarter the peppers.

    Cut the pepper quarters into very thin strips. Wash, clean, quarter and seed the tomato. Cut the flesh into very thin strips. Wash and clean spring onions and cut them diagonally into thin strips.

    Wash the mint, dab dry and cut the leaves of 2 stems into strips. Use the remaining leaves for garnishing. Heat 1/2 litre of oil in a frying pan. Fry the spring rolls in it for about 2 minutes, take them out and let them rest for about 5 minutes.

    Mix the sprouts, vegetable strips and mint strips and marinate with lime juice and 2 tablespoons of oil. Season salad with salt, pepper and a little chilli sauce. Halve the spring rolls diagonally and serve with the salad.
