Ingredients

Servings: 4
  • 250 g Butter
  • 3 Egg Yolk
  • 2 TABLESPOONS Lime juice
  • 7-10 Tbsp Salt
  • 7-10 Tbsp white pepper
  • 7-10 Tbsp Worcester sauce
  • 1 pinch Sugar
  • 100 g Smoked salmon
  • 7-10 Tbsp Lemon balm for
  • 7-10 Tbsp Garnish

Directions

    Melt the butter. Whisk the egg yolks, lime juice, a little salt and a pinch of pepper in a hot water bath until thick and frothy. Then gradually fold in the butter. Season with salt, pepper, Worcester sauce and a pinch of sugar. Finely dice the smoked salmon and fold in. Garnish with lemon balm
