Königsberg meatballs

Ingredients

  • 1 Bread roll (from the previous day)
  • 2 medium-sized onions
  • 750 g mixed mince
  • 1 egg + 1 egg yolk
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 7-10 Tbsp Sugar
  • 1 Bay leaf
  • 1 kg Potatoes
  • 1 collar Parsley
  • 5 tablespoons (50 g) Butter
  • 5 tablespoons (50 g) Flour
  • 200 g Whipped cream
  • 2 tablespoons (50 g) Capers (glass)
  • 1-2 TABLESPOONS Lemon juice

    Soak the rolls in a bowl of water for about 20 minutes, possibly in between.

    Onions peel, one finely dice. Put the minced meat, squeezed bread roll, diced onion, 1 egg, salt and pepper in a bowl and knead everything. Form about 12 dumplings with moistened hands, dipping your hands in water again and again.

    Boil up about 3 l of lightly salted water in a wide pot. Cut the remaining onion in half and add to the salted water with the bay leaf. Add the dumplings and simmer for 15-20 minutes at low heat.

    Peel and wash the potatoes. Cover and cook in salted water for about 20 minutes. Wash parsley and chop finely. Lift out dumplings with a skimmer and let them drain. Pour the meat stock through a fine sieve into a bowl and measure about 1 l stock for the sauce.

    Heat butter in a pot. Stir in flour smooth and evenly and fry until golden brown. Gradually stir in the measured meat stock and cream. Bring to the boil while stirring. Let the sauce simmer for about 5 minutes, stirring from time to time.

    ...with a little whisk. Add approx. 4 tablespoons of sauce while stirring. Then stir into the rest of the sauce. Do not boil the sauce from now on, so that it does not clot.

    Add capers and season the sauce with salt, pepper, lemon juice and 1 pinch of sugar.

    Put the meatballs in the sauce and heat them briefly. Drain the potatoes. Arrange the Königsberger meatballs with the potatoes and sprinkle with the chopped parsley. Serve with classic pickled beetroot.
