Köfte on tomato salsa

Ingredients

  • 6 Tomatoes
  • 2 Spring onions
  • 1 red chilli pepper
  • 1 untreated lemon
  • 2 Garlic cloves
  • 3-4 Tbsp Olive oil
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 7-10 Tbsp Sugar
  • 10 g Pine nuts
  • 1 Shallot
  • 250 g mixed minced meat
  • 1-2 TABLESPOONS Breadcrumbs
  • 1 Egg Yolk
  • 1 pinch Cinnamon
  • 7-10 Tbsp grated nutmeg
  • 2 TABLESPOONS Oil
  • 12 wooden skewers

Directions

    Wash, clean, quarter and cut the tomatoes into small cubes. Clean and wash spring onions. Cut spring onion green of an onion lengthwise into fine strips and put in water. Finely chop the remaining spring onions.

    Clean and wash the chilli pepper, cut lengthwise and remove the seeds. Chop the pod finely. Wash lemon hot, grate dry and grate peel. Halve lemon, squeeze juice. Peel garlic and chop finely.

    Mix the diced tomatoes, chilli, spring onions, lemon zest, half of the garlic and olive oil. Season the salsa with salt, pepper, lemon juice and sugar and let it stand. Meanwhile, roast the pine nuts in a pan without fat.

    Take out and let it cool down. Peel and finely dice the shallot. Knead minced meat, breadcrumbs, egg yolk, remaining garlic and diced shallots. Season with salt, pepper, cinnamon and nutmeg. Chop pine nuts and mix in.

    Form approx. 12 balls from the mass. Heat the oil in a large pan. Fry the balls for at least 10 minutes at medium heat, turning them over. Remove the meatballs from the pan. Fill tomato salsa into glasses, put meatballs on skewers and add.

    Garnish with strips of spring onion.
