Peel, wash and roughly grate the potatoes. Peel onion and cut into fine cubes. Pluck the thyme leaves from the stems. Cut olives into slices, chop cheese roughly. Put the grated potatoes, onion, thyme and minced meat in a bowl. Add the egg and work everything through with the dough hooks of the hand mixer.
Season with salt and pepper. Heat oil in a coated pan. Spread the potato mixture evenly on the bottom of the pan and fry until golden brown on one side. Turn the Rösti using a lid. Place olives and cheese on the fried side and fry the Rösti briefly on the other side as well. Serve with fresh salad and a light vinaigrette
