Peel and wash the potatoes. Place each potato one after the other on a spoon and cut them close together. Sprinkle with salt and place in an ovenproof dish. Pre-cook in the preheated oven (electric cooker: 175 °C/ gas: level 2) for about 20 minutes.
In the meantime, wash the sage and, except for a bouquet for garnishing, pluck the leaves. Pour cream over the potatoes. Sprinkle with sage leaves, parmesan and pepper. Cook for about 40 minutes.
Serve garnished with sage nosegays.
