Wash the pork loin, dab dry and make several diagonal cuts. Peel garlic and press it through a garlic press. Wash the herbs, dab dry and chop. Press the garlic into the incisions of the roast. Season with pepper and wrap firmly with kitchen string. Roast in the preheated oven (electric cooker: 175 °C/ convection oven: 150 °C/ gas: level 2) for about 1 hour. In the meantime, clean and wash the beans and cut them into bite-sized pieces.
Cook in boiling salted water for 15-20 minutes, then drain well. Peel and wash the potatoes and cut them into thin slices. Peel onions and cut into slices. Heat oil in a pan, fry potatoes and onions for about 10 minutes while turning. Season with salt and pepper. Add the beans and olives and toss in the frying fat. Arrange roast and vegetables on a plate
