Ingredients

  • 220 g washed and
  • 7-10 Tbsp pitted plums
  • 60 g Low-fat curd
  • 2 tablespoons (20 g) Oil
  • 6 tablespoons (60 ml) Milk
  • 24 g Fructose, salt
  • 120 g + approx. 1 teaspoon dark
  • 7-10 Tbsp Wheat flour
  • 1 coated Tsp Baking Powder
  • 1 Egg (Gr. M)
  • baking paper

    Cut plums into thin slices. Quark, oil,

    Mix 5 tablespoons of milk, 12 g fructose and 1 pinch of salt. Mix flour and baking powder and knead in

    Roll out the dough to a rectangle (approx. 20 x 32 cm) on a lightly floured work surface and divide into 4 rectangles (approx. 10 x 16 cm). Cover 1 half each with plums and sprinkle everything with 1 tsp (6 g) fructose. Separate the egg. Spread the edges of the dough with egg white, fold over and press on

    Cut the pockets a little bit. Place on a baking tray lined with baking paper. Bake in a hot oven (electric cooker: 200 °C / convection oven: 175 °C / gas: level 3) for about 10 minutes. Mix egg yolk and 1 tbsp. milk. Brush pockets with it and bake for another 5-10 minutes. Let cool off. Sprinkle with 1 tsp (6 g) fructose
