  • 20 Limes (approx. 1.6 kg; of which 3 organic)
  • 4-5 Stem(s) Mint
  • 1 package (1 kg) Gelling sugar
  • 5 TABLESPOONS Cachaça or rum (sugar cane brandy)

Directions

    Wash organic limes hot. Peel the skin very thinly, cut finely (approx. 15 g). Peel the 3 organic limes and 10 further limes including the white skin. Cut out the fillets between the parting skins.

    Squeeze the parting lines well. Drain the fillets, collect the juice (approx. 125 ml juice and 380 g pulp).

    Squeeze 7 limes (approx. 225 ml juice). Boil up the whole juice (350 ml) and the organic peel. Let cool down. Wash mint and cut finely. Sieve the lime juice.

    Boil up the fillets, juice and jam sugar in a large pot while stirring. Add cachaça and mint. Boil over high heat while stirring for at least 3 minutes until bubbly. Pour hot into prepared twist-off glasses.

    Close immediately and allow to cool upside down.
