Italian fried potatoes from the tray

Ingredients

  • 1 kg medium-sized potatoes
  • 3 TABLESPOONS Olive oil
  • 7-10 Tbsp Salt
  • 75 g dried tomatoes in oil
  • 150 g cherry tomatoes
  • 3 Garlic cloves
  • 2 Courgette
  • 200 g Salsiccia (Sicilian hot salami)
  • 3 Stem(s) Basil
  • 7-10 Tbsp Pepper

Directions

    Wash the potatoes thoroughly and cut into slices. Put potatoes on a baking tray, drizzle with 2 tablespoons of olive oil, salt and bake in the middle of the preheated oven (electric cooker: 200 °C/ convection oven: 175 °C/ gas: level 3) for approx. 50 minutes.

    Drain the dried tomatoes on kitchen paper and cut them into small pieces. Wash and clean the cherry tomatoes and grate them dry. Lightly crush garlic cloves. Wash and clean the zucchini, cut them in half lengthwise and cut into diagonal (not too thin) slices.

    Skin the salsiccia and cut into slices. Place the slices of courgette and garlic on the tray 20 minutes before the end of cooking. Place the tomatoes and salsiccia on the baking tray about 5 minutes before the end of cooking. Wash the basil, dab dry and cut the leaves from one stalk into strips.

    Remove the baked potatoes from the oven, add basilíkum strips and season with salt and pepper. Finally, garnish with basil leaves and sprinkle with about 1 tablespoon of olive oil.
