Ingredients

  • 7-10 Tbsp Pour 4 pers
  • 4 thin veal (or poultry) cutlets
  • 4 tranches de jambon de pays
  • 1 boule de mozzarella
  • 40 g de parmesan
  • 400 g crushed tomatoes (canned)
  • 1 sector de basilic
  • 2 gousses d'ail
  • 7-10 Tbsp farine
  • 7-10 Tbsp huile d'olive
  • 7-10 Tbsp sel et poivre

Directions

    1 Peel and chop the garlic and sauté it in an oiled pan. Pour in the crushed tomatoes, season with salt and pepper. Lower the heat to low and simmer 15 minutes, stirring often. Thinly slice and chop the basil, add it to the pan.

    2 Using a rolling pin, flatten the cutlets covered with cling film. Cut them in half, along with the slices of ham. Drain and cut the mozzarella cheese into 8 slices, grate the Parmesan cheese

    3 On each piece of meat, place ½ slice of ham and a slice of mozzarella cheese. Sprinkle the Parmesan cheese on top. Roll up the cutlets and keep them closed with a wooden skewer. Flour them

    4 Brown the involtoni in an oiled pan on both sides. Pour the tomato sauce over them. Cover and simmer for 5/7 mn on low heat. Serve with tagliatelle for example.
