Wash and clean spring onions and cut them roughly into pieces. Peel the carrots, clean the celery and dice them roughly. Clean the chilli, cut lengthwise, wash and remove seeds. Chop the vegetables in a blender. Press the sausage meat out of the skin and add oregano and fennel, mix in briefly
Cook the pasta in boiling salted water according to the instructions on the packet. Heat the oil in a frying pan. Fry the vegetable mix for approx. 5 minutes while turning until crumbly. Add tomatoes, season with salt and pepper. Simmer the sauce for about 5 minutes
Drain the pasta. Wash the basil, shake dry and roughly pluck the leaves. Add the noodles and basil, except for a little to garnish, to the sauce, mix and bring to the boil, arrange on plates. Garnish with remaining basil
