Peel and finely dice the garlic and shallots. Clean and wash the spring onion and cut into rings. Clean, wash and finely chop the lemon grass. Wash parsley, shake dry, pluck leaves from the stalks and chop. Wash, clean and finely chop the chilli. Wash lime hot, grate dry, grate peel thinly. Use the rest of the lime for other purposes.
Mix tomato paste, vinegar, soy sauce, sambal oelek, sugar and prepared ingredients. Marinate the grilled food in this mixture for at least 1 hour.
