Hutspot (Dutch stew)

Ingredients

Servings: 4
  • 1 kg Breast of beef
  • 7-10 Tbsp Salt
  • 4 Onions
  • 600 g Carrots
  • 500 g Parsnips
  • 600 g Potatoes
  • 1 collar Parsley
  • 7-10 Tbsp Pepper

Directions

    Wash the meat, put it in a pot. Add about 1.5 litres of water so that the meat is covered. Season with salt and bring to the boil. Cover and simmer for about 1 1/2 hours.

    Peel onions and cut into rings. Peel carrots and parsnips. Peel and wash potatoes. Cut everything into pieces

    Add the vegetables to the meat in the pot and simmer for another 45 minutes. Wash the parsley, dab dry. Pluck off leaves and chop finely, except for something to garnish. Remove meat from the pot, remove fat and bones.

    Cut meat into slices. Mash vegetables coarsely, season stock with salt and pepper. Serve the meat with the stew. Sprinkle with parsley and garnish
