Hot spaghetti with bacon

Ingredients

Servings: 4
  • 750 g Vine tomatoes
  • 1 Onion
  • 1 Garlic clove
  • 1–2 red chillies
  • 5 discs Bacon (à approx. 10 g)
  • 2 TABLESPOONS + 4 tsp olive oil
  • 1 spread a tablespoon of tomato puree
  • 3 Stem(s) Basil
  • 500 g Spaghetti
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 7-10 Tbsp Sugar
  • 150 g Robiola cheese (herb cream cheese)

Directions

    Wash, clean and dice the tomatoes. Peel and finely chop the onion. Peel garlic and chop finely. Clean the chilli, cut lengthwise, wash and remove the seeds. Chop the pod finely.

    Put the bacon in a lukewarm pan and heat it up. Leave the bacon crisp while turning. Remove and let it drip off on kitchen paper. Add 2 tablespoons of olive oil to the bacon fat. Fry onions, chilli and garlic for 1-2 minutes, then add tomato paste and steam briefly.

    Add the tomato pieces, cover and simmer for about 20 minutes.

    Wash the basil, shake dry and cut the leaves of 2 stems into strips. Break the bacon into pieces. Cook the pasta in boiling salted water according to the instructions on the packet.

    Drain the pasta. Mash the sauce lightly. Add basil strips and bacon and season to taste with salt, pepper and sugar. Mix pasta and sauce and arrange on plates. Add cream cheese in pieces and garnish with the rest of the basil.

    Drizzle 1 teaspoon of olive oil over each.
