Hoof steaks with small oven potatoes

Ingredients

Servings: 4
  • 800 g baby potatoes
  • 1 branch Rosemary
  • 7-10 Tbsp Salt
  • 4 TABLESPOONS Oil
  • 800 g Broccoli
  • 4 Hoof steaks (150 g each)
  • 7-10 Tbsp Pepper
  • 1 Onion
  • 1 TEASPOON green pepper (glass)
  • 2 TABLESPOONS Butter
  • 4 TABLESPOONS Breadcrumbs

  • 7-10 Tbsp Aluminium foil

Directions

    For the oven potatoes, wash the potatoes thoroughly, cut them in half lengthwise and place them on a baking tray lined with baking paper. Wash the rosemary and chop the needles finely. Season potatoes with salt and rosemary, drizzle with 2 tablespoons of oil. Cook in the preheated oven (electric cooker: 200 °C/circulating air: 180 °C/gas: see manufacturer) for about 45 minutes.

    Clean and wash the broccoli and cut it into florets. Cook in boiling salted water for about 5 minutes. Drain and keep warm.

    For the steaks dab meat dry. Season with salt and pepper. Heat 2 tablespoons of oil in a frying pan. Fry the steaks for about 3 minutes on each side. Wrap in aluminium foil and let it rest.

    For the sauce, peel and finely dice the onion and sauté in a hot frying pan until transparent. Deglaze with 200 ml water and bring to the boil. Stir in green pepper and let everything boil down to approx. 1⁄3 liquid.

    Heat the butter in a small pot. Fry the breadcrumbs in it. Drizzle broccoli with it. Serve everything.
