Hoof steak with parmesan potatoes

Ingredients

Servings: 1
  • 1 kg Potatoes
  • 3 TABLESPOONS clarified butter
  • 200 g Shallots
  • 1 Garlic clove
  • 7-10 Tbsp Sea salt
  • 7-10 Tbsp Steak pepper
  • 4 Hoof steaks (approx. 200 g each)
  • 100 g Parmesan (piece)
  • 200 g sour cream
  • 7-10 Tbsp Aluminium foil

Directions

    ##Peel, wash and chop the potatoes## Heat 2 tablespoons of lard in a large pan with lid. Cover the potatoes and fry them for about 10 minutes. Turn from time to time. Then fry open for another 10 minutes.

    Meanwhile peel ##shallots## and ##garlic##. Cut shallots into slices. Chop garlic very finely. Add the shallots and garlic 2 minutes before the end of the frying time and fry.

    Season with salt and pepper.

    Dab steaks dry, season with salt. Heat 1 tbsp. lard in a second pan. Fry the steaks in this pan over a high heat for 1-2 minutes on each side, then continue to fry on a medium heat for 2-3 minutes on each side (medium).

    Wrap the steaks in aluminium foil and let them rest for about 5 minutes. Slice Parmesan cheese into shavings with a peeler. Remove the potato pan from the stove. Fold the parmesan into the potatoes. Season potatoes with salt and pepper.

    Season steaks with salt and pepper. Add sour cream.
