Hoof steak with orange butter and mashed potatoes

Ingredients

Servings: 4
  • 1 untreated orange
  • 50 g + 2 tablespoons soft butter
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 800 g Broccoli
  • 1 Vegetable Onion
  • 4 Hoof steaks (approx. 180 g each)
  • 3 TABLESPOONS Sunflower oil
  • 1 TEASPOON Cornstarch
  • 7-10 Tbsp freshly grated nutmeg
  • 1 Bag of mashed potato powder
  • 125 ml Milk
  • 7-10 Tbsp Cling film

Directions

    Wash the orange hot, rub dry and grate the peel thinly. Halve the fruit and squeeze the juice. Mix 50 g butter and orange peel, season with salt and pepper. Form butter into a roll, wrap in foil and chill

    Clean the broccoli, cut into florets from the stalk, wash and cook in boiling salted water for about 6 minutes

    Peel onion and cut into rings. Dab meat dry and season with salt. Heat 2 tablespoons of oil in a large frying pan. Fry the steaks for about 3 minutes, turning on each side. Remove from the pan, season with pepper and keep warm. Pour broccoli into a sieve, rinse with cold water and drain

    Put 1 tablespoon of oil into the pan and fry the onion rings for about 4 minutes, turning them over. Remove the onion. Pour orange juice into the pan, bring to the boil and loosen the frying pan. Stir starch and 2 tbsp. water until smooth, thicken sauce with it. In the meantime heat 2 tbsp. butter in a second pan. Fry the broccoli for about 4 minutes while turning. Season to taste with salt and nutmeg. Meanwhile bring 375 ml water and salt to the boil in a saucepan. Remove from the heat and add milk. Stir in the puree flakes briefly with a wooden spoon

    Cut orange butter into slices. Season steaks with pepper. Arrange vegetables, meat, sauce, orange butter and puree. Onion rings and distribute on top
