Peel the ginger and cut into thin slices. Wash the orange, grate dry and cut into slices about 1⁄2 cm thick. Put white wine, apple juice, rum, ginger, orange and cinnamon sticks into a large pot.
Stir in honey and 1-2 Msp. cinnamon. Heat everything slowly, do not let it boil (the good alcohol will evaporate)!
In the meantime, wash the apple, grate it dry, quarter it, core it and cut it into very thin slices. Whip the cream with 1 tsp cinnamon in a bowl with the whisks of the mixer until semi-stiff. (Half stiff? Simply tilt the bowl slightly: when the creamy cream flows viscously to the side, it is perfect!) Pour cider, possibly through a sieve, into glasses.
Spill cinnamon cream on it. Decorate with apple slices as desired and dust with a little cinnamon. Happy slurping!.
