Pour the mandarin oranges into a sieve and drain. Collect the juice. In the meantime, stir 5 tablespoons of milk, sugar and pudding powder until smooth. Boil up the rest of the milk. Stir in the pudding powder. Bring to the boil again while stirring and simmer at low heat for 1 minute while stirring continuously. Remove from the stove
Divide mandarin oranges into 4 dessert glasses, spread half of the fruit juice on top, use the remaining juice for other purposes. Spread the pudding evenly on top and let it cool down
Whip the cream with the whisk of the hand mixer until stiff, allowing the vanillin sugar to trickle in. Spread the cream evenly on the cooled pudding. Decorate with lemon balm and crunchy chocolate rolls
