Hearty sausage salad with bread skewers

Ingredients

Servings: 5
  • 1 glass (670 g) Pickles
  • 1 collar Spring onions
  • 3 red onions
  • 1 (500 g) Pork sausage
  • 1 small red and yellow peppers
  • 2-3 TEASPOONS Mustard
  • 6 TABLESPOONS White wine vinegar
  • 8 TABLESPOONS Oil
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 4-6 discs Grey or crusty bread (approx. 60 g each)
  • 10 wooden skewers

Directions

    Drain the gherkins (put the stock aside) and cut into slices. Wash and clean spring onions and cut into rings. Peel, halve and slice the onions. Halve the sausage lengthwise and cut into thin slices. Clean, wash, quarter and cut the bell peppers into strips. For the vinaigrette mix mustard and vinegar, add 5 tablespoons of oil and season with salt and pepper. Mix spring onions, gherkins, pork sausage, onions, paprika and vinaigrette and season with some gherkin stock if necessary. Leave to stand for approx. 1 hour. Cut bread into cubes and distribute on 10 wooden skewers. Heat 3 tablespoons of oil in a pan and fry the bread skewers until crispy all around. Remove the skewers and place them on a piece of kitchen paper. Place the bread skewers in a glass or tall container and serve with the sausage salad
