Ingredients

  • 1 pack of (270 g) Butter puff pastry (from the fridge)
  • 1 collar Parsley
  • some stem(s) Thyme
  • 1 (approx. 150 g) small zucchini
  • 1 small clove of garlic
  • 1 small onion
  • 250 g Fresh cream
  • 1 Egg
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 12 discs g
  • 7-10 Tbsp Salad and cherry tomatoes

Directions

    Cut the dough into 6 squares. Fold the corners of each square slightly to the middle and place them on a baking tray covered with baking paper. Wash the herbs and chop them finely, except for some parsley. Wash and clean the zucchini and cut into very small cubes. Put some herbs and zucchini cubes aside for sprinkling. Peel garlic and onion and chop finely. Mix crème fraîche, egg, garlic, onion, rest of zucchini and herbs.

    Season with salt and pepper. Spread crème fraiche in the middle of each piece of dough. Bake in the preheated oven (electric cooker: 200 °C/ convection oven: 175 °C/ gas: level 3) for 10-15 minutes. After half the baking time, place 2 slices of ham on each Copenhagen. Remove the Copenhageners, sprinkle with remaining herbs and courgettes. Arrange the Copenhageners garnished with some lettuce, tomatoes and parsley
