Ham Carpaccio with figs

  • 6 TABLESPOONS Pine nuts
  • 100 g separated figs (soft)
  • 4 TABLESPOONS White wine vinegar
  • 7-10 Tbsp salt, pepper, sugar
  • 5 TABLESPOONS good olive oil
  • 250 g Parma ham

Directions

    Roast the pine nuts in a pan without fat, take them out. Finely dice dried figs. Mix vinegar, salt, pepper and 1 pinch of sugar. Fold in the oil.

    Stir pine nuts and figs into the vinaigrette. Arrange the ham on a plate and sprinkle with the vinaigrette. Serve with ciabatta.
