Ingredients

Servings: 50
  • 50 g dried apple rings
  • 3 TABLESPOONS Calvados (or apple juice)
  • 100 g Walnut kernels
  • 150 g Butter or margarine
  • 200 g demerara sugar
  • 2 Eggs (size M)
  • 2 TABLESPOONS Whipped cream
  • 400 g Flour
  • 1 pinch Salt
  • 50 g crunchy oats
  • baking paper

Directions

    Finely dice apple rings, mix with Calvados and set aside covered. Coarsely chop the walnut kernels. Melt the fat and let it cool down. Add sugar to the fat and stir until frothy. Whisk eggs and cream and also stir in. Mix flour and salt, add to the fat-sugar mixture and knead in briefly with the dough hooks of the hand mixer.

    Fold in oat flakes, walnuts and apple cubes. Line 2-3 baking trays with baking paper and place small heaps on top with a teaspoon. Bake one after the other in the preheated oven (electric: 200 °C/ gas: level 3) for 10-12 minutes. Let them cool down. Results in approx. 50 Coockies
