Put the flour in a bowl. Make a depression in the middle, add salt and 1 egg. Finely dice the marzipan and add 40 g sugar. Melt the fat in a saucepan and add milk.
Mix yeast and remaining sugar and add to the flour with the lukewarm milk mixture. Knead with the dough hooks of the hand mixer to a smooth yeast dough. Cover and leave to rise in a warm place for about 30 minutes.
Knead again and form about 2/3 of the dough into a thick roll. Cut half of the roll lengthwise for the legs. Form head, arms, hat, scarf and belt from the remaining dough. Separate the rest of the egg.
Brush the attachment points with egg white and stick the parts to the body. Put them on a baking tray lined with baking paper. Mix egg yolk and cream and brush the man with it. Decorate with raisins, almonds, hazelnuts, pumpkin seeds and sunflower seeds.
Cover and leave to rise again for about 10 minutes. Bake in the preheated oven (electric: 200 °C / gas: level 3) for approx. 25 minutes.
