Green pea soup with prawns

Ingredients

Servings: 4
  • 1 medium onion
  • 1 small light-coloured stick of leek (leek; approx. 100 g)
  • 1 (approx. 100 g) small piece of celeriac
  • 1 (approx. 100 g) medium potato
  • 1 TABLESPOON Butter or margarine
  • 1 1/4 l Vegetable broth (instant)
  • 4 discs Smoked salmon (about 30 g each)
  • 300 g frozen peas
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Cayenne pepper
  • 200 g North Sea crab meat
  • 7-10 Tbsp Dill

Directions

    Peel and finely chop the onion. Clean and wash the leek and celery and cut into small cubes. Peel and wash the potatoes and also cut them into small cubes. Heat the fat in a pot and fry the onion until transparent.

    Add the diced vegetables and sweat briefly. Deglaze with vegetable stock, bring to the boil and simmer for about 15 minutes. In the meantime cut smoked salmon into thin strips. Add about 200 g peas to the soup, bring to the boil and simmer for about 3 minutes.

    Finely puree everything with the cutting stick of the hand mixer. Season with salt and cayenne pepper. Add remaining peas to the soup and simmer gently for 1-2 minutes. Warm up the prawns and smoked salmon in the soup.

    Arrange pea soup in soup plates and garnish with dill.
