Green asparagus with turkey rolls

Ingredients

  • 3-4 Stem(s) flat leaf parsley
  • 4 (each 85 g) thin turkey breast
  • 7-10 Tbsp Salt
  • 7-10 Tbsp freshly ground white pepper
  • 1-2 TEASPOONS medium hot mustard
  • 4 discs Parma ham (approx. 12 g each)
  • 200 g Carrots
  • 1.5 kg green asparagus
  • 2-3 TABLESPOONS Oil
  • 400 ml Vegetable broth (instant)
  • 50 ml dry white wine
  • 100 g Whipped cream
  • 1-2 TABLESPOONS sauce thickener
  • 1 pinch Sugar
  • 20 g Butter
  • 30 g hulled sesame seeds
  • 7-10 Tbsp wooden skewers
  • 7-10 Tbsp Slices of lime and basil

Directions

    Wash the parsley, dab dry and pluck the leaves from the stalks. Wash the meat and dab dry. Place on a board and season with salt and pepper from one side. Spread with mustard, place one slice of ham on each side.

    Spread parsley leaves on top. Roll them up and stick them together with a wooden skewer. Peel, wash and finely dice the carrots. Clean the asparagus, cut off the lower woody ends. Wash the asparagus.

    Heat the oil in a frying pan, fry the rolls in it vigorously on all sides. In the meantime, put the asparagus in boiling salted water and cook for about 12 minutes. Cook the carrots for 4-5 minutes in boiling water. Deglaze rolls with stock, wine and cream.

    Bring to the boil, cover and simmer on medium heat for 9-10 minutes. Lift the rolls out of the stock and keep them warm. Bring the stock to the boil, stir in the sauce thickener and bring to the boil again. Season with salt, pepper and sugar

    In the meantime drain the carrots in a sieve. Lift the asparagus carefully out of the water. Melt butter and roast sesame seeds briefly in it. Remove the wooden skewers from the rolls. Cut the rolls into slices.

    Serve some sauce, sliced rolls, asparagus and carrots with sesame butter on plates. Serve garnished with slices of lime and basil as desired.
