Clean, wash and dry vegetables. Deseed and dice the peppers, tomatoes and cucumber. Peel and finely dice the onion. Wash and drain the spinach. Wash chives, shake dry, cut into fine rolls
Season lemon juice with salt, pepper and sugar, fold in oil. Mix prepared ingredients with vinaigrette and olives, season again and arrange in small salad bowls. Crumble feta cheese on top and serve. Bread tastes good with it
