Ingredients

  • 1 kg Potatoes
  • 1 (approx. 350 g) Aubergine
  • 7-10 Tbsp salt and pepper
  • 1 Onion
  • 2 Garlic cloves
  • 4 TABLESPOONS Olive oil
  • 500 g minced lamb or beef
  • 3-4 Stem(s) Oregano
  • 1 package (500 g) chunky tomatoes
  • 1/2 TEASPOON ground cinnamon
  • 2–3 big tomatoes
  • 2 TABLESPOONS + some butter
  • 2 slightly heaped tbsp. flour
  • 3/8 l Milk
  • 1 TEASPOON Vegetable broth (instant)
  • 2 Eggs
  • 75 g Kefalotiri (Greek hard cheese; substitute for parmesan)

Directions

    Boil the potatoes in water for 20 minutes. Wash and slice the aubergine. Place on kitchen paper, salt lightly. Leave to stand for 15 minutes. Peel onion and garlic and chop finely.

    Dab the aubergine dry and fry in 3 tablespoons of hot oil in portions while turning golden brown. Season with pepper. Drain on kitchen paper. Drain potatoes and rinse with cold water.

    Heat 1 tablespoon of oil in a frying pan. Fry the minced meat in it until crumbly. Fry onion and garlic briefly. Season with salt and pepper. Wash oregano, shake dry, chop and add.

    Stir in chunky tomatoes, bring to the boil and simmer for about 5 minutes. Season with salt, pepper and cinnamon. Peel and slice the potatoes. Wash and slice the tomatoes. Preheat oven (electric cooker: 200°C/circulating air: 175°C/gas: level 3).

    For the sauce, melt 2 tablespoons of butter. Sauté the flour lightly in it. Stir in milk, 1/4 l water and stock, bring to the boil and simmer for 5 minutes. Season with salt and pepper, remove from heat. Whisk eggs.

    Stir in 4 tablespoons of sauce, stir everything into the sauce.

    Grease a baking dish well. Layer potatoes and minced meat on top. Alternately cover with aubergine and tomato slices like roof tiles. Pour sauce over it. Grate cheese directly on top. Bake in a hot oven for about 40 minutes until golden brown.
