Ingredients

  • 25 g fresh yeast
  • 20 g Sugar
  • 50 g Butter
  • 250 ml Milk
  • 1 TEASPOON Salt
  • 600 g Flour
  • 1 egg (size M)
  • 8-10 Stem(s) Thyme
  • 75 g pitted, green olives
  • 150 g Goat Gouda cheese
  • 1 Egg yolk (size M)
  • 2 TABLESPOONS Whipped cream
  • 1-2 TABLESPOONS Poppy and sesame seed
  • 7-10 Tbsp Thyme
  • 7-10 Tbsp Flour

Directions

    Stir yeast and sugar until liquid. Warm the butter and milk. Add 125 ml water and cool down lukewarm. Put salt, flour and egg in a bowl. Add milk mixture. Add yeast and sugar mixture and immediately knead into an elastic dough with the dough hooks of the hand mixer for about 6 minutes.

    Cover and leave to rise in a warm place for about 45 minutes.

    Meanwhile, wash the thyme, shake dry and pluck the leaves from the stalks. Coarsely chop the olives. Grate cheese finely. Pour the dough onto a floured work surface, sprinkle thyme over it and sprinkle it on the cheese.

    Halve the dough, form a roll (approx. 40 cm long) from each half. Cut each roll into approx. 18 slices.

    Press the dough slices slightly flat on the floured palm of your hand. Place approx. 1 tsp. grated cheese and 1/2 tsp. olives in the middle of each slice. Close the dough on top and form into rolls with floured hands.

    Put the rolls on 2 baking trays lined with baking paper. Cover and leave to rise again for about 20 minutes. Whisk egg yolk and cream. Spread the bread roll with it, sprinkle with poppy or sesame seeds. Bake in a preheated oven (electric cooker: 200 °C/ convection oven: 175 °C/ gas: see "Baking instructions").
