Gratinated tomato on pork medallion

Ingredients

Servings: 4
  • 8 Pork medallions (approx. 60 g each)
  • 1 (approx. 250 g) large zucchini
  • 2 medium-sized tomatoes
  • 1 (125 g) scoop of mozzarella cheese
  • 8 Basil leaves
  • 2 TABLESPOONS Oil
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 7-10 Tbsp Basil and marinated peppers
  • 8 little wooden skewers

Directions

    Wash medallions and pat dry. Clean and wash the zucchini and cut them into thin, wide strips with a peeler. Blanch briefly in boiling water and drain. Wrap 1-2 zucchini strips around each medallion and pin them with wooden skewers. Clean, wash and cut tomatoes into thick slices. Drain mozzarella and cut into 8 slices. Wash the basil.

    Heat 1 tablespoon of oil. Fry the medallions in it for about 2 minutes on each side. Season with salt and pepper. Spread the remaining oil on a baking tray and place the medallions on top. Cover each medallion with 1 slice of tomato, 1 basil leaf and 1 slice of mozzarella. Gratinate in the preheated oven (electric cooker: 225 ° C/ gas: level 4) for 2-3 minutes. Garnish with basil and pepperoni
