Crostini with wild garlic scrambled eggs and smoked ham

It's wild garlic season again. We put the tangy herb in the scrambled eggs for brunch. Delicious!

Ingredients

Servings: 4
  • 1 collar Wild garlic
  • 8 Eggs (size M)
  • 75 ml Milk
  • 7-10 Tbsp Salt
  • 7-10 Tbsp white pepper
  • 7-10 Tbsp grated nutmeg
  • 3 TABLESPOONS Olive oil
  • 8 discs Ciabatta bread
  • 2 discs (20 g each) Cured ham

Directions

    Wash the wild garlic, dab dry and clean. Set aside 4 leaves for covering. Cut the rest of the wild garlic into strips. Whisk eggs and milk, season with salt, pepper and nutmeg. Add wild garlic and puree with a chopping stick.

    Heat 2 tablespoons of oil in a coated pan. Fry the slices of bread in it from both sides until golden brown. Pluck the ham roughly. Take out bread and let it drain. Wipe the pan with kitchen paper.

    Heat 1 tablespoon of oil in it. Fry the ham for 1-2 minutes until golden brown. Cut the wild garlic leaves in half diagonally. Cover crostini with wild garlic. Remove the ham and let it drain as well.

    Add the egg mixture to the pan and let it set while stirring. Spread the scrambled eggs on the crostinis and cover with ham.
