STUFFED TOMATO WITH AVOCADO SALAD

Ingredients

Servings: 4
  • 6 Meat tomatoes (approx. 300 g each)
  • 1/2 bunch Spring onions
  • 2 (125 g each) balls of mozzarella cheese
  • 3-4 Stem(s) Basil
  • 2 Limes
  • 3 Avocados
  • 1 TABLESPOON Rapeseed oil
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper

Directions

    Wash the tomatoes, grate them dry and cut 4 horizontally in half. Hollow out tomato halves about 1 cm deep, but leave a rim about 0.5 cm wide. Wash 2 tomatoes, grate dry and cut into quarters.

    Remove the seeds and cut the flesh into cubes. Wash and clean the spring onions and cut them into thin slices. Cut the mozzarella into cubes. Wash basil, dab dry and chop the leaves finely.

    Squeeze the limes. Cut avocados in half, remove the core and remove the flesh from the skin with a tablespoon. Cut the avocado flesh into cubes and drizzle with the lime juice. Add mozzarella, tomatoes, rapeseed oil, basil and spring onions and season with salt and pepper.

    Fill the tomatoes with the filling. Ciabatta tastes good with it.
