Ingredients

Servings: 4
  • 4 discs (160 g) light grey bread (e.g. Baseler Brot)
  • 375 g Tomatoes
  • 3 TABLESPOONS Oil
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 100 g Spring onions
  • 250 g white mushrooms
  • 500 g Turkey escalope
  • 1/8 l clear chicken stock (instant)
  • 125 g Whipped cream
  • 2-3 TABLESPOONS sauce thickener
  • 100-125 g grated gouda cheese
  • 7-10 Tbsp Tomato and parsley

Directions

  1. 1

Roast slices of bread in a toaster and place them on a baking tray lined with baking paper. Wash the tomatoes, dab dry and cut into slices. Heat some oil in a large pan and fry the tomato slices for 1-2 minutes while turning.

  2. 2

Season with salt and pepper and spread on the bread slices. Clean and wash the spring onions and cut them into rings. Clean the mushrooms and cut them into slices. Cut the cutlets into strips. Heat the remaining oil in a frying pan and fry the meat thoroughly.

  3. 3

Add the mushrooms, fry briefly and season with salt and pepper. Fold in spring onions and deglaze with stock and cream. Bring to the boil, stir in the sauce thickener and let it boil for about 1 minute. Season to taste with salt and pepper and spread on the slices of bread.

  4. 4

Sprinkle with cheese and bake in the preheated oven (electric cooker: 250 ° C/ gas: level 5) for about 5 minutes. Serve garnished with tomato and parsley as desired.
