Ingredients

Servings: 4
  • 100 g pickled roasted peppers (glass)
  • 1 small onion
  • 1 Garlic clove
  • 2-3 stem(s) Parsley
  • 100 g Whole milk yoghurt
  • 2-3 TABLESPOONS Fresh cream
  • 7-10 Tbsp Salt
  • 7-10 Tbsp white pepper
  • 2 packs (125 g each) Mini mozzarella balls
  • 1 Egg
  • 2-3 TABLESPOONS Flour
  • 3-4 Tbsp Breadcrumbs
  • 5-7 TABLESPOONS Oil
  • 50 g Arugula (rocket)
  • 7-10 Tbsp wooden skewers

    Drain the peppers. Peel onion and garlic. Wash the parsley. Cut everything finely, add

    Mix yoghurt and crème fraîche. Season to taste with salt and pepper

    Drain the mozzarella. Whisk the egg, season with salt and pepper. Turn the mozzarella one after the other in flour, egg and breadcrumbs. Fry all around in hot oil until golden brown. Take out, drain on kitchen paper

    Clean and wash the arugula. Serve with mozzarella. Serve with pepper dip and wooden skewers. Served with: wholemeal ciabatta

    Drink: cool white wine
