Gnocchi salad with rocket, tomatoes and salmon ham in mustard vinaigrette

Ingredients

Servings: 4
  • 250 g cherry tomatoes
  • 100 g Rocket
  • 1 package (400 g) Gnocchi (Italian potato dumplings; refrigerated shelf)
  • 1 (approx. 40 g) small shallot
  • 3 TABLESPOONS White wine vinegar
  • 1 tsp (7 g) coarse mustard
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 1 pinch Sugar
  • 3 tablespoons (10 g each) Oil
  • 8 discs (10 g each) Salmon ham without fat edge
  • 3 teaspoons ( each 3 g) Lentil sprouts

Directions

    Wash and halve the tomatoes. Wash the rocket, dab dry and possibly shorten the stem ends. Prepare gnocchi in boiling salted water according to package instructions. In the meantime peel, halve and finely dice the shallot. Mix vinegar, mustard and shallot.

    Season to taste with salt, pepper and sugar. Fold in the oil. Halve the ham slices. Mix all ingredients and marinate for about 5 minutes. Arrange on plates, garnish with lentil sprouts
