Giant rösti with herb quark and salmon

Ingredients

  • 150 g Spring onions
  • 350 g Potatoes
  • 1 Egg
  • 1 TABLESPOON Flour
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 1 TABLESPOON Oil
  • 1/2 bunch Dill, parsley and chives
  • 100 g Low-fat curd
  • 50 g Schmand
  • 1 TABLESPOON fizzy mineral water
  • 2 discs (approx. 50 g) smoked salmon

Directions

    Clean and wash spring onions and cut into fine rings. Peel, wash and coarsely grate the potatoes and mix with the onions, egg and flour. Season with salt and pepper. Heat oil in a pan.

    Place the Rösti batter in the pan, smooth it down and fry the underside over medium heat for 5-7 minutes until golden brown. Slide the Rösti onto a flat pan lid, turn with the help of the lid and fry from this side for another 5-7 minutes.

    Wash the herbs and, except for a little dill and parsley for garnishing, chop coarsely. Mix quark, sour cream, mineral water and chopped herbs and season with salt and pepper. Serve Rösti with curd and salmon.

    Serve garnished with remaining herbs.
