Germ dumplings with poppy seed

Ingredients

  • 500 g Flour
  • 50 g Butter or margarine
  • 1 TEASPOON Salt
  • 5 TABLESPOONS Sugar
  • 20 g Yeast
  • 1 Egg
  • 7-10 Tbsp grated rind of 1 untreated lemon
  • 200 ml Milk
  • 250 g Plum jam
  • 50 g ground poppy seed
  • 100 g Butter

Directions

    Mix flour, fat, salt, 1 tablespoon sugar, yeast, egg and lemon rind with the dough hooks of the hand mixer. Add the milk bit by bit. Knead the dough until it throws bubbles and comes off the bowl rim. Cover and leave to rise in a warm place for about 30 minutes. Knead again well and cut the dough in half.

    Form a roll from each half and cut into 5 pieces. Press each piece flat and put 1 teaspoon of plum jam in the middle of each. Form the dough into a ball. Bring water to the boil in a pot. Place a perforated insert in it so that it does not dip into the water. Place 2-3 dumplings in each and cook covered in steam for about 20 minutes. Then prick 2-3 times with a wooden skewer. Mix poppy seeds and remaining sugar. Melt butter and pour over the dumplings.
