Galettes with bacon and cheese potatoes

Ingredients

Servings: 4
  • 750 g cook hard. Potatoes
  • 50 g Buckwheat flour
  • 50 g Flour
  • 4 Eggs (Gr. M)
  • 7-10 Tbsp salt, white pepper
  • 50-75 g smoked
  • 7-10 Tbsp streaky bacon
  • 75-100 g Raclette cheese
  • 1 medium onion
  • 3-4 Stem(s) Parsley
  • 3 Stem(s) fresher or
  • 1/2 TEASPOON dried thyme
  • 1-2 TABLESPOONS Oil
  • 4 TSP Butter

Directions

    Wash the potatoes and boil in water for about 20 minutes. Then quench, peel and let cool

    In the meantime, mix buckwheat flour, flour, eggs, 1 pinch of salt and 200 ml water to a smooth dough. Let it swell for about 15 minutes

    Dice the potatoes. Cut bacon into fine strips. Coarsely grate cheese. Peel and chop onion. Wash, chop or pluck the herbs

    Heat the oil in a frying pan. Leave the bacon in it until crispy. Add potatoes and fry until golden brown. Fry the onion briefly. Season and stir in herbs. Keep warm

    Heat butter in portions in a coated pan (26-28 cm Ø). Bake 4 thin pancakes (galettes) one after the other from the dough. Fold the cheese into the potatoes and let it melt. Fill the galettes with the potatoes, serve immediately
