Fruit salad with almond brittle

Ingredients

Servings: 4
  • 4 TABLESPOONS Sugar
  • 3 tablespoons (50 g) Almond slivers
  • 7-10 Tbsp Oil
  • 1-2 Pears (about 200 g each)
  • 4 TABLESPOONS Lemon juice
  • 1 small ripe mango
  • 1 large banana
  • 2 Kiwis
  • 100 ml Orange juice
  • 1-2 TABLESPOONS liquid honey
  • 7-10 Tbsp Mint
  • 7-10 Tbsp Aluminium foil

Directions

    Caramelise the sugar in a pan until golden brown. Stir in almonds. Spread the brittle on a piece of aluminium foil coated with oil and let it cool down

    Wash and quarter the pears and remove the core. Cut the flesh into slices and sprinkle with lemon juice. Peel the mango. Cut the flesh from the stone and dice. Peel and slice banana and kiwis. Mix the prepared fruits

    Mix orange juice and honey. Arrange the fruit on small plates and sprinkle with the marinade. Coarsely chop the brittle and sprinkle on top. Decorate with mint if desired.

    Instead of the fresh mango you can also use canned goods. Apricots or peaches are also suitable

    The brittle also tastes good with walnuts or Brazil nuts

    For adults you can refine the fruit salad with a little liqueur as you like
