Ingredients

  • 170 g dried soft apricots
  • 100 g dried soft figs
  • 50 g (approx. 120 g) + 30 pieces walnut halves
  • 70 g Sultanas
  • 50 g Hazelnut kernels
  • 50 g Almond kernels without shell
  • 250 g + 1 tablespoon butter or margarine
  • 70 g Sugar
  • 70 g Honey
  • 1 pinch Salt
  • 1 package Vanillin sugar
  • 5 Eggs (size M)
  • 500 g Flour
  • 1 package Baking Powder
  • 75 ml Milk
  • 4 TABLESPOONS Rum
  • 50 g dried cherries
  • 5-6 Tbsp Icing sugar for dusting
  • 7-10 Tbsp Fat and flour

    Cut 15 apricots in half horizontally and cut out 30 small stars. Cut figs, apricots and apricot slices into small pieces. Put 30 walnut halves and about 1 tablespoon raisins aside for decoration. Roast the remaining nuts and almonds in a pan without fat, remove and chop roughly. Cream 250 g fat, sugar, honey, salt and vanilla sugar with the whisks of the hand mixer. Stir in the eggs one by one. Mix flour and baking powder and stir alternately with milk and rum into the dough.

    Fold nuts and fruits into the dough. Spread the dough onto the greased and floured fat pan of the oven (32 x 39 cm) and bake in the preheated oven (electric cooker: 175 °C/ convection oven: 150 °C/ gas: level 2) for 25-30 minutes until golden brown. Remove the cake from the oven. Melt 1 tablespoon of fat. Brush the warm cake with it and dust it thickly with icing sugar. Cut the lukewarm or cold cake into strips and decorate with 1 walnut half, raisins and an apricot star
