Ingredients

  • 100 g fresh dates
  • 100 g Icing sugar
  • 1 knife tip ground cinnamon
  • 2 Protein (size M)
  • 1 TABLESPOON Rum
  • 30 g Cornstarch
  • 50 g ground almonds without skin
  • 50 g chopped almonds
  • 25 (à 4 cm Ø) Oblates
  • 50 g Dark chocolate
  • baking paper
  • 1 freezer bag or disposable piping bag

Directions

    Cut dates into small pieces. Sift the icing sugar and cinnamon into a bowl. Beat the egg whites until stiff, while pouring in the sugar mix and rum. Mix starch, ground and chopped almonds and dates and fold into the beaten egg white. Place the wafers on 2 baking trays lined with baking paper. Pour egg mixture into a piping bag with a perforated spout (not too small) and spray evenly onto the wafers.

    Bake the trays one after the other in a preheated oven (electric cooker: 150 °C/ convection oven: 125 °C/ gas: level 1) for 15-20 minutes. Take out, put the thalers on a cake rack and let them cool down. Roughly chop the chocolate and melt in a bowl over a warm water bath. Pour chocolate into a small freezer bag or piping bag. Cut off a small corner. Decorate date taler with chocolate strips and chill for about 30 minutes
