Ingredients

  • 500 g Low-fat curd
  • 1 pinch Salt
  • 6 TABLESPOONS fresh squeezed lemon juice
  • 80 g + 3 tablespoons sugar
  • 250 g Whipped cream
  • 300 g Blueberries
  • 150 g Shortbread
  • 75 g Butter
  • 7-10 Tbsp Cling film

Directions

    Mix quark, salt, 3 tablespoons lemon juice and 80 g sugar. Whip the cream with the whisks of the hand mixer until stiff and fold into the quark. Wash the blueberries. Puree the berries, except for a few for decoration, 3 tablespoons lemon juice and 3 tablespoons sugar with the blender. Line a box mould (1 1/2 litre capacity) with foil.

    Put 4 tablespoons of quark cream into the mould, smooth it down and freeze for at least 20 minutes. Remove the mould, put 2 tablespoons of the berry mixture on the quark cream, smooth it down and freeze for at least 15 minutes. Repeat the procedure 4 times. In the meantime, chop the biscuits. Melt butter. Mix the biscuits and butter. Spread on the last layer of ice cream and press down lightly. Cover the mould with foil and freeze for at least 4 hours. Turn out the ice from the mould, remove the foil and cut the ice into slices.
