Fried potatoes

Ingredients

Servings: 4
  • 1 kg waxy potatoes
  • 50 g Bacon
  • 2 small onions (about 60 g each)
  • 10 Stem(s) Parsley
  • 3-5 Tbsp Olive oil
  • 250 g Low-fat curd
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper

Directions

    Wash the potatoes and cook in plenty of boiling water for about 20 minutes. Cut bacon into strips. Peel onions and cut into cubes. Wash parsley and dab dry. Pluck the parsley from the stalks and cut into strips, except for something to garnish.

    Put approx. 2 tablespoons aside. Mix parsley and 1 tablespoon of olive oil with the quark. Season to taste with salt and pepper. Rinse potatoes under cold water, drain and peel.

    Cut the potatoes into slices. Heat 1-2 tablespoons of oil in each of 2 large pans. Leave half of the bacon in each of them. Remove the bacon. Spread the potatoes on the pans and fry for 8-10 minutes while turning.

    Add bacon and onions and fry for another 5 minutes. Fold in the remaining parsley. Arrange the fried potatoes in a pan. Garnish with parsley. Add the herb quark.
