Ingredients

Servings: 4
  • 750 g Potatoes
  • 1 red pepper
  • 2 Federation Spring onions
  • 75 g streaky smoked bacon
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 4 Eggs
  • 2 TABLESPOONS Oil
  • 1 collar flat leaf parsley

Directions

    Peel and wash the potatoes and cut them into thin slices. Peppers and spring onions clean, wash and cut into pieces. Dice bacon and fry it crisply in a pan without fat. Remove from the pan. Fry the potato slices in the frying fat for about 10 minutes. Add bell peppers, spring onions and bacon and cook for another 5 minutes.

    Season with salt and pepper. Fry eggs as fried eggs in hot oil. Season with salt. Wash parsley, dab dry and chop. Serve the pan with the fried eggs. Sprinkle with parsley
